Fireplace And Built-Ins
I love the inspirational picture you selected for your built-ins around your fireplace. I have done a quick not to scale mockup of what you could consider for around your fireplace. I would have the built-ins painted Benjamin Moore Cloud White to tie in with your kitchen cabinets you could do a different pull but in a brass finish.

You mentioned you didn’t love the look of a television above a fireplace but there is a tv that you can purchase that looks like it is a piece of framed art when not in use, which would be a great option so that it looks nice when your not using it but you can also watch tv from the kitchen. It is called The Frame you read more about that HERE.
I would keep the base cabinets shallow around 15” to 18” deep and you could have the shelves above 12” to 15” depending on what you would like to house in them. You could have the built-ins span the whole wall or just a section, the cost of built-in can be quite high so keeping them in from the corners would be a nice cost-saving measure. The other issue with using the whole wall is that are a lot of open shelves to decorate which may be a great thing or you may stress about all of that open space.

Paint Colour Options
Below is a Concept Board with your existing selections, I like to do this so we can get an overall feel of your space.
I know you were thinking that Benjamin Moore Seashell is too light and I don’t disagree, it would look lovely but it would be very light. It is not far off your cabinet colour. Here is a room painted, Benjamin Moore Seashell to help you visualize. It would be a beautiful backdrop for your colourful art and black accents but it wouldn’t provide much contrast from your cabinets. I have added some other options for to consider below.

I would paint your front hall, kitchen and living room the same colour since they are all open to each other. I recommend getting a sample of each and testing it in several areas so you can evaluate it in different lighting. If you don’t want to paint swatches all over your main floor there is a company that you can order 12 x 12 peel and stick paint samples, you can check them out HERE.
Below I have shown Cloud White with each of the options so you can better see the contrast.
Paint For Banister
I think a classic black and white combination would look fantastic on your stairs. I have added my go-to black paint colour as well as a black stain option if you would prefer having them stained.

Kitchen Pendants
I have added elevations showing how to place your pendants in two different sizes. I have also added some pendants in different price points for you to consider. Keep in mind that any of the pendants with a glass shade will provide more overall lighting and those with a metal shade will only direct the light onto your peninsula.
